摘要:在中国美食的谱系中,如果说刀鱼、鲥鱼、湖蟹等淡水鱼鲜代表了精英阶层的舌尖审美,是文人们口口称颂的雅馔,那么牛肉面则是平民阶层中最具旺盛生命力、最能反映地域风物的离离春草。牛肉面发展史从宏观角度来看,牛肉面并非中国土生的食品,今天我们吃到的牛肉面大抵有两大源流,西食东渐与海上舶来。
